Low Carb Christmas Pudding Recipe 

Serving Size:             9

Prep Time:              14 minutes

Cook Time:              7 minutes

Total Time:             21 minutes  

Ingredients:

  • Protein Muffin Mix – ¼ pack
  • Chopped dried Apricots – ½ cup or 70g
  • Chopped dried Prunes – 1.25 cups or 250g
  • Sultanas (golden raisins) – ¼ cup or 35g
  • Butter or Coconut Oil – 90g
  • Brandy – 3/8 cup or 90g
  • Powder or grounded cinnamon – ½ teaspoon or 3g
  • British Mixed Spice – ½ teaspoon or 3g
  • Nutmeg – ½ teaspoon or 3g
  • Eggs – 1
  • Orange – ½ an orange to juice & grate zest

Tools:

  • Microwave
  • Microwave Safe Bowl
  • Mixing Bowl
  • Spatula or wooden spoon to combine ingredients.

Alternative Ingredients/Brand Recommendations

  • Dried Apricots – Mariani Mediterranean Brand (no sugar added, can purchase from Amazon)
  • Dried Prunes – Sunny Fruit Brand (no sugar added, can purchase from Amazon)
  • Sultanas – Food to Live Brand (no sugar added, is lightly coated with Sunflower Oil, can purchase from Amazon) or can use Golden Berries – Healthworks Brand (may alter flavor, can purchase from Amazon

Directions:

  1. In a microwave safe bowl, place all dried fruit, orange juice, orange zest & brandy and microwave for 2 minutes, until fruit softens.
  2. Add coconut oil or butter into microwaved mixture and stir until melted.
  3. In a separate mixing bowl, combine your cinnamon, nutmeg, British mix spice, & Protein Muffin Mix.
  4. Add in the egg to the fruit mix and combine. Pour the fruit mixture into the dry mix and combine.
  5. Spray your Mini Dutch Oven Pots with oil or grease with butter.
  6. Pour in your pudding mix evenly into each pot and cover with the lid.
  7. For 3 – 5 minutes cook your pudding mix on medium power. If cooked on high power, the pudding may dry out.
  8. Let the pudding cool in the pot for 7 minutes then serve your pudding in RJ Legend’s classy Mini Dutch Oven Pots or use a spatula to loosen the pudding from the pot’s edges and turn the pudding out for a beautiful dome like shape.
