This recipe for the keto pumpkin lava cake was born from my plenty of research and scrolling to find that ideal dessert for the season of fall and winter coming up and about whether it would be possible to bake a low-carb dessert in my RJ Legend mini cast iron pot. The recipe is quite simple and will only take about less than 45 minutes to cook and serve just for yourself!

It's not every day that you get to try a keto pumpkin lava cake, but it's even rarer to try a keto pumpkin lava cake baked in a mini cast iron pot. If you're wondering what I'm talking about, I will breakdown this keto pumpkin lava cake recipe that is perfect for the upcoming holidays.

 

Ingredients breakdown

The total time to make this recipe is about 45 minutes with a total about 4 servings. The ingredients are nothing out of the ordinary so here is the list:

  • ½ recipe sugar  free caramel sugar
  • 1/3 cup pumpkin puree
  • ¼ cup butter, melted
  • 2 large eggs
  • ½ teaspoons of vanilla extract
  • 6 tablespoons of powdered sweetener
  • 6 tablespoons of almond flour
  • 1 teaspoon pumpkin pie spice

Method

First, prepare the caramel sauce, then allow it to cool and solidify. Since only half of the caramel sauce is required for this recipe, you can easily accomplish that. Alternately, you can prepare the entire recipe and reserve the extra for ice cream toppings.

Although you don't turn these keto lava cakes out of the mini pots, you should still oil them. It prevents the cakey goodness from sticking to the sides and hardening.

Each mini pot pumpkin batter should have a well made in the middle to hold the caramel sauce. To seal the caramel sauce in, make sure some batter is spread over the bottom and the edges.

For each cake, use around 1 spoonful of keto caramel sauce. If you let it to cool sufficiently, it ought to have firmed up a little. When adding it to the cakes, you don't want it to be fully liquid.

The remaining batter should be used to cover the caramel, and the tops should be as smooth as possible with a spoon.

The cakes are finished when the top is almost completely set to the touch and the sides have set. They will become a little bit rough if you bake them for too long.

Cooking method

Follow the instructions to make the caramel sauce but skip Step 4 and add no more water. Allow it to totally cool before continuing.

Grease 3 mini pots lightly and preheat the oven to 350 degrees.

The pumpkin puree, melted butter, eggs, and vanilla extract should all be combined in a big basin. Almond flour, pumpkin pie spice, and sweetener should all be thoroughly blended.

To fill the bottom of each mini pot, distribute about 2/3 of the batter between them. Make a well in the batter with a spoon (you want some batter to cover the bottom of the mini-pot but raised on the sides).

The cakes should be baked for 20 to 25 minutes, or until golden brown and the tops are barely firm to the touch. There can be a small amount of caramel sauce bursting through the top.

Before serving in the mini-pot, remove and allow to cool for ten minutes

If preferred, serve with the remaining caramel sauce and keto vanilla ice cream on top. If the sauce has significantly thickened, add one tablespoon of water and slowly reheat in the pan.
